Every bag has an ingredients list of one word. No added sugar, no preservatives, no fillers, no anti-caking agents. Contains naturally occurring sugars. All six are wild berries. Our aronia berry powder is farm-grown rather than wild, so it is not in this bundle; it is sold separately.
Why these six
Six colours, six flavours. Three of the six are the same berry in three forms: the whole freeze-dried bilberry, which you eat as it is; the bilberry powder, which is the same fruit ground fine; and the fiber powder, made from the skins and seeds left after the juice is pressed, mild where the powder is loud. The other three cover the rest of the Nordic forest: lingonberry, pale pink and clean; cranberry, aggressively tart; sea buckthorn, golden-orange and citrusy.
Two drying methods are in the box. The whole bilberries and the bilberry powder are freeze-dried: frozen after harvest, then dried under vacuum at low temperature while still frozen, which is how they keep their crunch, their tartness and their colour. We explain the process in what freeze-drying is. The lingonberry, cranberry and sea buckthorn are air-dried at low temperature, and the fiber powder is air-dried at low temperature as well. Tasting them side by side is the quickest way to learn what each method does.
How to use them
The whole bilberries you eat straight from the bag, or stir into porridge or yogurt, where they rehydrate slightly and burst. The five powders go in at one to two teaspoons: into porridge, a smoothie, yogurt or skyr, into baking, into dressings, or wherever you want a colour that comes from a fruit. Bilberry powder for frosting and cheesecake batter. Lingonberry for vinaigrettes and glazes. Cranberry for kombucha, marinades and scones. Sea buckthorn for orange juice and carrot-and-ginger smoothies. The fiber powder for bread, muffins and pancakes, where it mixes in without taking over.
The powders clump in humid air because there are no anti-caking agents in them. Break the clump with a spoon; the flavour and the colour are unchanged. Keep every bag sealed, in a cool, dry place, out of direct light.
Origin, food safety and shipping
The berries are wild, hand-picked in Finnish forests and bogs under everyman’s right. Kylmä Co. is under Finnish food-safety supervision; the Oiva inspection report is published on this site. The bags are packed in Nurmijärvi, Finland.
They are not organic-certified.
