What it is
When wild bilberries are pressed for juice, what remains is the pomace: the skins, the seeds and the solids. That is what this powder is made of. Pomace is mostly skins and seeds. It comes from wild Vaccinium myrtillus, the European wild bilberry, not the cultivated highbush blueberry; our guide to wild bilberry versus cultivated blueberry explains the difference.
The ingredients list is one word: bilberry. We think that matters. No added sugar, no preservatives, no fillers, no carriers, no anti-caking agents. Contains naturally occurring sugars. 100 g in a resealable doypack.
How it is made
The bilberries are hand-picked in Finnish forests during the season, from mid-July to early September. After the juice is pressed out, the pomace is air-dried at low temperature and ground. Packing happens in Nurmijärvi, Finland. Nothing is added at any step.
What it tastes like
Mild and earthy, with a clear bilberry note but without the sharpness of the whole-berry powder. Not sweet. Not bright. If our freeze-dried bilberry powder is the loud one, this is the quiet one. It does not take over whatever you put it in, which is what you want from an ingredient you use most days.
How to use it
Stir one to two teaspoons into porridge, a smoothie, yogurt or skyr. Add it to bread, muffin or pancake batter; it mixes in cleanly and does not overwhelm the other flavours. If you want the intense colour and the tart bite of the fruit itself, our freeze-dried bilberry powder is the one to pick. This one is for the days when you want the bilberry in the background.
Storage and clumping
Keep the bag sealed, in a cool, dry place, out of direct light. In practice this powder clumps less than our freeze-dried bilberry powder, but there are no anti-caking agents in it, no silicon dioxide, so in humid air it can still pack together. A spoon breaks the clump; the flavour is unchanged.

The bilberries are wild, hand-picked in Finnish forests under everyman’s right. Kylmä Co. is under Finnish food-safety supervision; the Oiva inspection report is published on this site.
