What is inside

Three of our most distinct wild berries. One to start with.

Three resealable 100 g doypacks. Each has an ingredients list of one word, the berry. No added sugar, no preservatives, no fillers, no anti-caking agents. Contains naturally occurring sugars.

Why these three

Three different flavours. Three different colours. Bilberry is deep violet, tart and concentrated, with an almost wine-like depth. Lingonberry is pale pink, clean and sharp, and cuts through fat and sweetness equally well. Sea buckthorn is golden-orange, citrusy, almost tropical, and then it bites back. Put a teaspoon of each into three bowls of yogurt and you have most of the Finnish forest in one breakfast. It is a good way to find out which one belongs in your kitchen before you settle on a favourite.

Two drying methods are in the box. The bilberry is freeze-dried: frozen after harvest, then dried under vacuum at low temperature while still frozen. The lingonberry and the sea buckthorn are air-dried at low temperature. All three are then ground, and all three are wild, hand-picked in Finnish forests. The bilberry is picked from mid-July to early September; the lingonberry and sea buckthorn come later, in the autumn.

How to use them

The everyday way is one to two teaspoons stirred into porridge, a smoothie, yogurt or skyr. Beyond that, each has its habits. Bilberry goes into frosting, cheesecake batter and overnight oats. Lingonberry goes into vinaigrettes, cheesecake toppings and glazes for roasted vegetables. Sea buckthorn goes into orange juice, a carrot-and-ginger smoothie, or warm water with honey. All three colour what they touch, so they double as natural food colours. Start with one teaspoon of each; they are strong, and it is easier to add than to take out.

The powders clump in humid air because there are no anti-caking agents in them, no silicon dioxide. Break the clump with a spoon; the flavour and the colour are unchanged. Keep the bags sealed, in a cool, dry place, out of direct light.

The berries are wild, hand-picked in Finnish forests under everyman’s right. Kylmä Co. is under Finnish food-safety supervision; the Oiva inspection report is published on this site. The bags are packed in Nurmijärvi, Finland.

They are not organic-certified.
